Ingredients

Salad

  • 1/4 cup Quinoa, Uncooked
  • 1/2 cup Black Olives Sliced
  • 1/2 cup Steamed/Canned Corn Kernels
  • 1/4 cup chopped Red onion
  • 1/4 cup Cilantro
  • 1/3 cup Feta Cheese Crumbles
  • 1/2 cup Roasted Red Peppers
  • 2 cup Cucumbers, Chopped

Dressing

  • 1 tbsp Lime Juice
  • 1/4 tsp Pepper
  • 1/2 tsp Dill Weed
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Plain Greek Yogurt

Instructions

  1. Combine the salad ingredients in a bowl

  2. Combine the dressing ingredients and shake or stir until thoroughly blended.

  3. Pour dressing over salad and gently stir together until everything is coated with the dressing
